Baked brie is always my go-to when there are potlucks. A lot of people only do this during the holidays. However, I can confirm that people LOVE baked brie any time of the year.
In fact, one of my friends has a baked brie party in June during the National spelling bee…calling it her National spelling BRIE party. You can see why she and I are friends.
The best thing about this brie is that it’s very flexible. No need to make your own dough, they have great puff pastry dough at the grocery store (thanks Pepperidge Farms). Plus you can make it with pretty much any fruit jam and nuts you have on hand. I made this one with my homemade apple butter and slivered almonds that I made after going apple picking. Other great options include:
- fig preserves + balsamic glaze
- apricot jam + slivered almonds
- honey + walnuts
The world is your oyster! Plus you can make this ahead of time. Just wrap the brie in the pastry dough with your fillings then wrap in plastic wrap and stick in the fridge till you’re ready to cook. Add the egg wash just before putting it in the oven.
I like to serve this baked brie with a variety of crackers. You could use a baguette, rice crackers, anything really. Like I said, it’s very flexible! And always delicious.

Baked brie with any fruit jamPrint This
- 1 puff pastry sheet, thawed
- 1 brie wheel
- 3 tbsp fruit jam (apple butter in the picture)
- 2 tbsp slivered almond (or another nut of your choice)
- 1 egg
- crackers of your choosing
Preheat the oven to 400º.
Lay the puff pastry down on a floured surface. Place the round of brie on top and spread the jam over the brie. Add the slivered almonds.
Carefully wrap your pastry dough around the brie. I like to go clockwise around the brie and wrap the dough over which leaves me with a pretty big chunk at the end that I fold over the brie and tuck underneath.
In a small bowl, whisk together 1 egg. Next, use a pastry brush (or your fingers if you don’t have one) to cover the brie with an egg wash.
Place in the oven for 25 min, keeping an eye on it. The puff pastry should be golden brown and cooked through. Let it cool for about 5 minutes before serving.
