Mediterranean salmon with hummus has been one of my favorite combos since spending my days at the Fido cafe in Nashville when I was in college and eating their Mediterranean salad for like every dinner.
This meal is really easy to throw together and requires no time on the stove. This means it’s totally doable for those with a limited kitchen space. In fact, I make my salmon in a toaster oven so this meal could even be made in a college dorm!

Mediterranean salmon with hummus and tomato saladPrint This
- 2 salmon filets
- sprinkle of garlic powder, dried oregano, salt, pepper
- 1 lemon, thinly sliced
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tbsp parsley, chopped
- 1/8 tsp pepper
- 1/8 tsp salt
- 1/2 lb tomatoes, cubed (I love early girl tomatoes or cherry tomatoes are good too...the sweeter the better for me!)
- 2-3 Persian cucumbers, sliced and halved
- 1/3 cup hummus (feel free to use a flavored hummus! I like using Rosemary hummus)
- 1 oz feta cheese (optional)
Preheat oven to 400º (if you’re using a toaster oven you can skip this).
Put tin foil down on a baking sheet and place your salmon skin-side down. Season with a sprinkle of garlic powder, dried oregano, salt and pepper. Top each filet with sliced lemons (however many you can fit, usually about three slices for me).
Place in oven or toaster oven for about 15 minutes to have it medium-well.
Meanwhile, cut your tomatoes and cucumbers. I usually peel the cucumbers first them slice them and halve them. For the tomatoes, it kinda depends on what kind you have. If it’s cherry, just halve them but if you have bigger tomatoes, cut them into chunks.
In a medium bowl, add the cucumbers and tomatoes with the chopped parsley. Add the olive oil and red wine vinegar plus the chopped parsley. If you want feta, add that here as well. Add salt and pepper to taste (I suggest 1/8 tsp of each to start).
Spread hummus on your plates. Add the salmon on top then add the tomato and cucumber salad on top. I spoon some of the dressing on top as well.
