A chicken enchilada dinner always sounds great in theory, but for my household of two, it’s sometimes hard to make if we don’t want to be eating enchiladas for all meals for the next three days!
Therefore, I give you the chicken enchilada bowl – the amazing flavors of enchiladas with the texture, comfort, and ease of a bowl. Plus, with only 5 ingredients, this recipe is great for an easy weeknight dinner.

- 3/4-1lb chicken breast
- 1/2 jar enchilada sauce
- 1 bag of frozen cauliflower rice
- 1.5 cups frozen roasted corn
- 4 tbsp avocado salsa (or as much as you want)
- olive oil, salt and pepper*
Fill a large saucepan with water till it’s about halfway full and put on the stove over high heat. Bring to a boil and add chicken breast once the water is boiling. Cook for about 25 min (chicken should be white all the way through).
While the chicken is boiling, start heating up about a tbsp of olive oil (just want to coat the pan) in a large skillet over medium heat. Add the frozen cauliflower rice (can find this in the frozen veggie section of most grocery stores) and sprinkle a little salt and pepper.
Then add the frozen corn and stir together, cooking till warm all the way through (about 10 minutes for me usually). When it’s done, I just turn it to as low as my stove will go and leave it there till the rest of the meal is ready.
When the chicken is done, remove from the water and bring to a cutting board or plate. Grab two forks and use them both to shred the chicken (I have a video of this on my Instagram if you need a visualization for this).
Pour the old water from the saucepan where you boiled the chicken and return the pan to the stove, keeping the burner on medium-high heat. Add the shredded chicken back to the pan and add the enchilada sauce (you can use more than 1/2 jar if you want it really saucy). Heat till warm, about 3-4 min.
Serve cauliflower rice mixture in a bowl and top with chicken enchilada mixture. Then you can spoon as much avocado salsa as you want on top!
*I don't include olive oil, salt or pepper as part of my 5 ingredients. These I just assume you have but I promise that's it!
