BBQ chicken stuffed sweet potatoes are great all year round, don’t get me wrong. But these guys are especially good for the in-between summer and fall time when school has started back but it’s still pretty warm outside.
You still have your summery bbq sauce but stuffed into a warm, fall sweet potato that’s sweet, savory and delicious! The good news about this one too is that it takes very little hands-on time, AND I happen to know that you can even microwave your sweet potatoes if you’re in a pinch and need to eat fast!

- 1 cup rotisserie chicken (or any cooked chicken)
- 1/4 cup red onion, chopped
- 2 small-medium sweet potatoes
- 1/2 cup bbq sauce
- 2 tbsp cilantro, chopped
- olive oil, salt and pepper*
Preheat your oven to 400º.
Wash your sweet potatoes and stab them all over with a fork. Place on a baking sheet covered in aluminum foil and drizzle with a look olive oil. Place in the oven for 45-50 min (depending on how big the potatoes are…they should be pretty squishy when you touch them). If you don’t have this time, you can microwave these for 5 min apiece as well, making sure to still stab them with a fork before!
In the last 10 min or so of the potatoes’ cook time, put the chicken in a small saucepan over medium heat on the stove. Add 1/2 cup bbq sauce, heat till warm (around 5 minutes).
Pull the sweet potatoes out and cut down the middle, leaving the ends intact so you can add the chicken.
Top with red onion and cilantro and serve!
*I don't include olive oil, salt or pepper as part of my 5 ingredients. These I just assume you have but I promise that's it!
