Mussels are another one of those recipes/ingredients that on the surface seem to only be fit for restaurants. These guys, however, are really easy for a home cook and take less than 10 minutes to make.
The key with mussels is to have live mussels to cook with. So, this is the kind of meal that you make the same day you go to the grocery store to get the mussels. If you have to stop somewhere else on your way home from the store, I would even ask the people behind the fish counter to put the mussels on ice for you to travel on your way home.
To make sure your mussels are live, you want them all to be completely closed. Sometimes your mussels will open, if they’re still alive, you should be able to tap them on the counter or against each other and they should close up.
Discard any mussels that don’t close with you tap them. These are dead and are not good to eat. It’s also good to make sure you give them a little clean, so rinse them in a colander for a bit and give them a little scrub if they have extra stuff on them.
If you’ve made sure that you have good mussels then the rest of the meal is
easy as pie easier than pie.

5-ingredient musselsPrint This
- 1 shallot, thinly sliced
- 1 lb mussels, live
- 1 can diced tomatoes
- 1/2 can white wine
- 1 baguette
- *olive oil, salt and pepper
Heat a little olive oil over high heat in a large, deep skillet (just enough to cover the pan).
Add shallot and a sprinkle of salt and pepper and sautee for about 3 minutes. Next, add can of diced tomatoes and stir around till evenly distributed.
Fill your empty diced tomato can with white wine (a dry wine would be good but to be honest, you want to do whatever wine you’d like to drink! No sense in wasting wine!).
After about 2 min, the mixture should start to simmer. Add your mussels and cover for 5 minutes (all the mussels should be open by this time. If they’re not, cook for longer till they are).
To serve, I bring the pan straight to the table with a couple of bowls. Serve into your bowls and use the baguette to soak up all the delicious sauce!
