- 1 jar of marinara sauce (or any pasta sauce you like)
- 5 eggs
- 1 oz feta cheese, crumbled
- 1 tbsp parsley, roughly chopped
- Pain au levain, toasted (optional...you can also use any other bread you like)
Pour the sauce in a skillet over medium-high heat.
Crack 5 eggs into the skillet and sprinkle feta cheese over the top. Cover and cook until the egg whites turn white (about 5 min).
Remove the lid and top with parsley. Spoon onto toast and enjoy!
